My Favorite Sweet Potato Pie (Mother's recipe)

Ingredients

1 unbaked pie shell

3 egg yolks

3/4 cup sugar

4 tablespoons butter

1 cup mashed sweet potatoes

1-1/2 cup milk

1 teaspoon lemon extract or 1/2 teaspoon nutmeg

3 egg whites

Instructions

Beat egg yolks. Add sugar, butter, milk, mashed sweet potatoes, and milk. (The mixture should be thin.) Add flavoring.

 

Beat egg whites until stiff and fold into the sweet potato mixture.

 

Pour into unbaked pastry shell and bake in a 450 degree oven for 10 minutes.

 

Then bake about 35 minutes longer in a 350-degree oven. Custard is done when the knife inserted in the mixture comes out clean.

Notes

While the recipe is simple, I tend to experiment by adding additional ingredients like vanilla flavoring, cinnamon, and heavy cream. Make this jawn to your liking, you can't go wrong! Thanks, Mom in Heaven, for leaving us your recipe book.
